Summer Fresh Buffalo Chicken Lettuce Wraps

We've been busy around here and I have a few blog posts to get up to date on. First, I want to share these sunny tree photos that make my heart happy:

 Mmm, I can smell the fresh summer air through these photos.


I also have to share a new recipe we tried last week that was easy and so fresh. The meal would be great hot or cold - I love a fresh cold meal on a hot summer day.


Buffalo Chicken Lettuce Wraps
Recipe adapted from Skinny Taste; Makes 6 Servings




Ingredients:

For the chicken:

  • 24 oz boneless skinless chicken breast
  • 1 celery rib
  • 1/2 onion, diced
  • 1 clove garlic
  • 16 oz low sodium chicken broth
  • 1/2 cup hot cayenne pepper sauce (I used Frank's Buffalo Wing Sauce)

For the wraps:

  • 6 large lettuce leaves, Bibb or Iceberg
  • 1 1/2 cups shredded carrots
  • 2 large celery ribs, cut into 2 inch matchsticks

Directions:
In a crock pot, combine chicken, onions, celery stalk, garlic and broth (enough to cover your chicken, use water if the can of broth isn't enough). Cover and cook on high 4 hours.






Remove the chicken from pot, reserve 1/2 cup broth and discard the rest. Shred the chicken with two forks, return to the slow cooker with the 1/2 cup broth and the hot sauce and set to on high for an additional 30 minutes. Makes 3 cups chicken.



To prepare lettuce cups, place 1/2 cup buffalo chicken in each leaf, top with 1/4 cup shredded carrots, celery and dressing of your choice. Wrap up and enjoy!





These are also great in a tortilla! It also made us think of other ways we could use fresh lettuce as wraps wraps - chicken salad would be great in these too.

 




More to come soon! We made Mexican pizzas last night and they were definitely worth sharing, so I'll get that here soon. I also am excited to show our trip to Decorah, Iowa this past weekend in photos! 

We had a great time catching up with family and enjoying the beautiful drive (although I have to say I slept most of the way home:)).
