Snow Day!!!

As an adult, I assumed my hope for snow days was over.... but today is an exception, I hoped and I achieved! :) My office is closed today and it's well needed extra day off - Nick is off today too, bonus! From business casual to home casual it is!

Last night it started raining as we went to bed. We woke up early this morning to the sleet sheeting against our windows and kept an eye on the weather reports and road conditions - they weren't looking very good. Lots of accidents/cars spun out and poor road conditions all over the area. Then the snow started to fall on top of the ice. We also are getting the coldest temps they've had in 15 years!!! Wind chills around 0 and in the single digits and getting colder... what we call "Minnesota cold" :).

We ventured to our parking lot to check it out. We were actually surprised how much ice there really was (last time the huge "ice storm" was not bad at all compared to our standards of Midwest winter storms!)


Usually our lot is empty with everyone being at work during the day - everyone's home today though! With Dallas, Fort Worth, and pretty much all the metro school systems out (not to mention the DFW airport!), the whole area is pretty much shut down. Pretty much worst case scenario weather for the Super Bowl planning committee...


The lot is definitely iced over! Maybe 1/4 inch or so of solid ice? Not going anywhere today, thank you!



Hmm... what to do on a snow day?



Whipping up a batch of single serve cookie dough it is!

It was super easy to make - I heard about it a few weeks ago on IGE's site - it's egg-free so no worries about eating it raw! Plus, who doesn't LOVE cookie dough?! It may be better than the cookies themselves...

Ingredients
1 tbsp Butter
Chocolate Chips (how ever many you want)
1 tbsp Water
3 tbsp Flour
2 tbsp Sugar
1/2 tsp Vanilla

Directions
Mash the butter. Add all ingredients except for water and chocolate chips. Mix well, it will be dry and crumbly. Then stir in chocolate chips and add in the water. Freeze for a few minutes and enjoy!


Who knows what the rest of the snow day includes! Maybe more cooking or baking or reading.. and maybe crossing a few things off the to-do list, but I will sure enjoy whatever I do!
